Chicken Syncronizada


1. Start with cutting your chicken into 1 inch strips.

2. Combine with taco seasoning in bowl, cover and set aside.

3. Saute' onions in butter until translucent. Add peppers and saute' for a minute before adding chicken to pan. Cook chicken with onions, peppers and butter until slightly browned and no longer pink (cooked through). Transfer contents to bowl and set aside.

4. Take 2 tortillas and lay them flat on a plate. Spread refried beans on each side (as much or as little as you like) Grab approx 1.5 oz of the shredded cheese and sprinkle on one tortilla. Now spoon enough chicken mixture to cover that tortilla completely. take remaining 1.5 oz of shredded cheese and sprinkle on top of chicken mixture. Top with other tortilla (the one that only has refried beans on it).

5. Heat 1 Tbs butter in pan at medium heat and spread other Tbs of butter on top of tortilla. Once butter is melted in pan add tortilla and cook on un-buttered side for a minute or so, until browned. Carefully flip tortilla with large spatula and brown on other side until cheese is melty.

6. Remove from pan and top with guacamole and shredded cheese (optional). Cut into triangles.

7. Repeat steps 4 & 5 with second set of tortillas.
