1. Shake pieces of chicken in a bag with the flour, salt and ginger. 2. Melt the butter in a baking dish and roll chicken in butter, coating well. 3. Arrange skin side up in a single layer and bake uncovered for 20 minutes at 200C (400F). 4. In a skillet, dice bacon and fry gently until brown; drain bacon. 5. Add remaining ingredients and cook over medium heat, stirring constantly until thickened. 6. Turn chicken, brush with more butter and bake another 20 minutes. 7. Brush chicken with curry glaze and bake an additional 20 minutes until golden. 8. Serve with rice. ---------------------------------------------------------------------------
