1. boil garbanzos for 15 minutes. preheat oven 400. rinse the chickpeas & let fully dry. line a pan with foil & spread the beans. bake 20 minutes, tossing twice. 2. remove from oven, toss in oil & spice & salt & cool completely. i made madras curry from scratch but any kind of masala curry powder will be fine. 3. when cool, return to oven & bake 15 minutes. remove & cool on paper towels. 4. bake at your own risk.
