Chilaquiles Casserole


1. Heat oven to 375*. Saute onion, turkey, zucchini and garlic till browned in a large saucepan/pot. Drain off excess fluid.

2. Add the canned ingredients (EXCEPT refried beans), frozen corn and chili powder to the meat mixture. Stir well and simmer 5 minutes.

3. Spray a 13 x 9-inch pan with oil. Spread the can of refried beans on the bottom. Place 6 corn tortillas on the beans, overlapping as needed.

4. Put half of the cooked mixture over the tortillas followed by half of the grated cheese on top. Repeat with the last 6 tortillas, mixture and cheese. Cover with a foil top. (Spray the underside of the foil with oil so the cheese does not stick.).

5. Bake the casserole for 20 minutes. Remove the foil and continue baking till the cheese is melted, 5-10 minutes more.
