1. Heat the olive oil in a non-frying pan and fry the breadcrumbs until golden and beginning to crisp. Remove and set aside. 2. Fry the scallions in oil until soft and golden. Add the chopped pepper, chili, ground turmeric and garlic. Cook, stirring, for 5min. 3. Add the beans, mayonnaise, two-thirds of the breadcrumbs and the basil. Season, mash roughly with a fork, then press mixture down to flatten. Sprinkle over remaining breadcrumbs. 4. Fry the bean cake over a moderate heat for 4-5min until the base is golden. ---------------------------------------------------------------------------
