1. Heat oil in a large wok or frying pan. 2. Add the ginger, garlic and pork mince. 3. Cook for 8 minutes, turning and stirring occasionally, until golden brown. 4. Add the water chestnuts and spring onions. 5. Cook for 1 minute, stirring constantly. 6. Stir in dark soy sauce and Chinese five spice. 7. Cook for 1 minute. 8. Spoon pork mixture into blanched lettuce leaves. 9. Pour over a little hoisin sauce to taste. 10. Wrap up leaves. 11.
