1. In a heavy saucepan, heat oil/butter over low heat. 2. Add rice and lime juice. 3. Stir for 1 minute. 4. Add water and salt, bring to a full boil. 5. Cover, turn down to simmer over low heat until rice is tender and water is absorbed (approx. 25 mins). 6. Fluff rice with a fork 7.
