1. In a bowl, beat the eggs with the Grana Padano cheese. 2. Add salt to taste. 3. Heat the olive oil in a non-stick pan. 4. Add the potatoes, red pepper and onion; cook for 5 minutes or until the vegetables are soft. 5. Pour the egg mixture into the frying pan. 6. With a fork, evenly distribute the egg mixture. 7. Cook for approximately 3-4 minutes with a lid on. 8. Carefully flip the frittata over and cook for another 2 minutes. 9.
