Coca De Pascua


1. Heat oven to 400º.

2. In a large bowl, combine sugar, eggs, egg yolks, milk and lemon zest.

3. Beat until creamy.

4. Combine flour and baking powder, and add to egg mixture, a little at a time.

5. Add oil and stir to combine.

6. Grease and flour a spring form pan.

7. Pour batter into pan and top with pine nuts.

8. Bake at 400º for 30 minutes, or until a toothpick inserted near the center comes out clean.

9. Let cool and remove outer ring.
