Cocoa Crunch Cookies ( Gluten Free )


1. Preheat oven to 375 degrees Fahrenheit

2. Line a large cookie sheet with parchment paper

3. Blend flour, gum, cinnamon, cocoa, b. powder and b. soda together in a small bowl. Set aside

4. In a large bowl mix butter and sugar together and form a smooth paste

5. Add eggs to butter/sugar mixture and beat with an electric mixer on medium speed until smooth and creamy

6. Put corn flakes in a large bag and crush lightly with a rolling pin before adding to butter/sugar mixture.

7. Stir in yogurt and combine all ingredients together well

8. Mix in dry ingredients blending everything with flour to make a soft ball of dough

9. Take small amounts of dough and roll it in your hand to make a ball.

10. Place balls 2 inches apart on cookie sheet and bake for 10 minutes until lightly browned

11. Remove from oven and place on wire rack to cool completely.
