1. Combine all ingredients and mix well. 2. Set aside until ready to use. 3. Sprinkle cut bananas with sugar, lime juice and rum. 4. Marinate 1 hour. 5. Heat cooking oil to cover in sauce pan. 6. Dip bananas in batter and quickly fry in hot oil, turning once. 7. Sprinkle with toasted coconut and serve immediately. 8.
