1. Beat egg whites until very firm, gradually adding the sugar and a pinch of salt. About 5-10 minutes. 2. Slowly and carefully incorporate coconut and lemon cest. 3. Cover a baking tray with either non stick baking parchment or a little melted butter and form little "heaps/piles" out of the coconut batter (about 1tsp. each). 4. Bake at 180°C for about 15 minutes.
