Coconut Milk Curry Chicken


1. Cut chicken into cubes.

2. In a large skillet over low heat melt butter.

3. Add curry powder and swirl it around until well mixed.

4. Slowly add coconut milk and whisk as you add it.

5. Stir until well mixed.

6. Set aside on very low heat.

7. In a separate skillet heat olive oil over medium heat.

8. Saute the onion and garlic until lightly brown.

9. Add cubed chicken and cook until chicken is lightly cooked.

10. Add potatoes and mix then add curry/coconut milk mixture.

11. Mix again.

12. Cook on medium heat until mixture starts to simmer.

13. Cover and cook on low heat for about 30 minutes.
