Coconut Rum Preserve


1. Simmer the coconut, water& zest, covered for 30 minutes.

2. Add the sugar& 3 T juice.

3. Cook on low, uncovered, for 1 hour.

4. Stir during the last 15 minutes.

5. Gradually add in boiling water, 3 T juice,& rum.

6. Simmer for 1 minute.

7. Stir in craisins.

8. Pack into 1/2 pint jars.
