Coconut Soup (St. Kitts)


1. Combine coconut and chicken stock in a heavy saucepan.

2. Cover and cook on simmer for 30 minutes.

3. Strain through a sieve.

4. Discard the coconut after pressing down to extract all liquid.

5. Cream the the flour and butter together and stir into stock with the heavy cream, stirring over low heat, until soup is. thickened.

6. Season to taste with salt and pepper.
