Colombian Potato Salad


1. Peel cooled potatoes and chop into bite sized dice; place in a large bowl.

2. Rinse and drain vienna sausages, cut each into 4 rounds; add to potatoes.

3. Add onion and celery to potatoes.

4. Coarsely chop eggs and add to potatoes.

5. Add peas and carrots.

6. Combine mayonnaise and sour cream; stir into potato mixture.

7. Season with salt and pepper; garnish with green onions.
