Coq Au Vin (Chicken In Wine)


1. Heat oil in large skillet.

2. Brown chicken pieces lightly and place in large pot.

3. Add to skillet and brown lightly, smoked meat, scallions, carrot and garlic.

4. Add flour, parsley flakes, majoram, bay leaf, salt, pepper, and wine and bring to a simmer.

5. Pour over chicken.

6. The chicken should be covered.

7. Simmer over low heat for 1 hour.

8. Add mushrooms during last 5 minutes.

9. Your house will smell great.

10. Serve with rice.
