1. Preheat oven to 425 degrees. 2. Lightly spray eight muffin cups with vegetable oil spray. 3. Combine flour, cornmeal, baking powder, and salt in a large bowl, stirring well. 4. Beat remaining ingredients in a small bowl. 5. Make a well in cornmeal mixture. 6. Pour milk mixture into well, stirring just until moistened. 7. Fill muffin cups two-thirds full with batter. 8.
