Country Chicken Casserole


1. Heat the oil in a flameproof casserole, add the chicken and fry until lightly browned on all sides.

2. Remove the chicken from the pan with a slotted spoon. Set aside.

3. Add the vegetables to the pan and fry for 5 minutes or until softened.

4. Stir in the flour and gradually add the remaining ingredients, including the chicken, stirring thoroughly.

5. Bring to the boil, cover and simmer gently for 40 minutes, stirring occasionally.

6. Serve.
