1. Preheat oven to 400 deg. 2. Wash & dry the zucchini. Slice them in half lengthwise & then crosswise. Place in an oven prof baking dish, skin side down. 3. Drizzle the zucchini with olive oil (about 1 T per zucchini - less if you want to save a few calories). Use a pastry brush to evenly distribute the olive oil on the zucchini tops. 4. Sprinkle the zucchini with sale & pepper & finish with the Parmesan cheese. 5. Place the dish in the oven & bake for about 30 minute The zucchini are done when they are tender & the tops golden brown. 6.
