Creamy Polenta For 2


1. Pour chicken stock, fat free milk and coarse ground corn into a cold pot.

2. Turn burner on Medium/Medium-High.

3. Bring contents of pot to a simmer.

4. Simmer until contents are no longer "wet" - corn has absorbed most of the liquid.

5. Turn burner off and add cheddar cheese, cream cheese, salt and pepper; whisk to combine.

6. Serve warm.
