1. In a large crockpot, add broth. 2. Slice sausage, chop onions. 3. Add all remaining ingredients except water, rice, hot sauce. 4. Stir and place crockpot on high setting. 5. Add enough water to just cover the ingredients. 6. Stir occasionally. 7. Cook 8-12 hours or until beans are tender. 8. Shave meat off the hock and discard bone. 9. Remove bay leaves, and serve with fluffy white rice and a dash of hot sauce if you like. ---------------------------------------------------------------------------
