Cuban Lobster Tails


1. Preheat Grill.

2. In a blender combine the lemon juice, orange juice, orange zest, chipotle and adodo sauce, brown sugar and salt.

3. Puree until smooth.

4. With motor running slowly add oil.

5. Puree for 2 minutes.

6. Pour into a bowl and set aside.

7. Take a sharp knife and cut lobster tails in half lengthwise.

8. Brush sauce on meat.

9. Place meat-side down on grill.

10. Cook for 3 minutes.

11. Turn tails meat side up.

12. Drizzle remaining sauce on meat.

13. Cook for 4 minutes, or until meat is opaque.

14. Serve.
