Curried Chicken Kebabs


1. Place the coriander, cumin, curry and turmeric in a dry skillet and toast over low heat until fragrant, about 30 seconds.

2. Transfer the toasted spices to a large bowl with the coconut milk, olive oil, vinegar, mirin, honey and a hefty pinch of salt and pepper. Whisk all the ingredients until well combined.

3. Add the cubed chicken and toss to coat well with the marinade.

4. Marinate in the refrigerator for 1 to 2 hours.

5. Prepare your gas or charcoal grill to medium-high heat. Loosely thread the marinated chicken onto the skewers and season with salt and pepper. Grill for about 4 minutes per side, or until browned and cooked through.

6. You can also cook the kebabs in a grill pan or 425 degree oven.
