Danish Shavuot Cheesecake


1. Turn the oven on to 390F.

2. In a large bowl beat the egg yolks with 1 cup of sugar, vanilla and the lemon juice until thick and fluffy. In another bowl, blend the cottage cheese and once smooth, mix it well with the other cup of sugar, then fold in the flour and baking powder. Now mix the two batters. Then whip the egg whites until stiff and finally gently fold these inches.

3. Pour into well buttered pan and bake in the middle of the oven for 45-50 minute.
