1. Coat chicken with 1 tablespoon soy sauce and garlic; let stand for 20 minutes. 2. Combine remaining 2 tablespoons soy sauce, oyster sauce, potato starch and 1/3 cup water (or chicken broth) - set aside. 3. Cook noodles as package directs. Set aside. 4. Heat wok or large frying pan over medium high heat. Add olive oil to coat wok. 5. Add chicken and stir fry for 2 minutes, or until lightly browned. 6. Add green onions, carrots, cabbage, etc. Stir fry for 1 minute. 7. NOTE: Alternative to cabbage is nappa, which can be found at any Asian supermarket and some regular grocery stores. 8. Add potato starch mixture and noodles. NOTE: be sure to stir before pouring inches. 9. Cook and stir 1 minute or until sauce thickens and is hot enough to serve. 10. Remove from heat.
