1. Combine ginger, orange rind, orange juice, vinegar and soy sauce in a zip-lock bag. 2. Add meat strips and mix thoroughly with marinade. 3. Refrigerate for 45 minutes. 4. Remove meat from bag and strain, reserving marinade. 5. Add cornstarch to marinade and mix thoroughly;set aside. 6. Spray non-stick skillet with cooking spray and heat to medium-high. 7. Add meat strips and stir fry for 5 minutes. 8. Remove from skillet. 9. Drizzle oil over skillet. 10. Add snow peas, celery and red pepper, and stir fry for 3 minutes. 11. Add steak strips and reserved marinade and stir fry for an additional 2 to 3 minutes. ---------------------------------------------------------------------------
