1. Place the white sugar and brown sugar into a heavy saucepan. 2. Pour the water into the centre, then make a large X across the sugar with your fingertip to let the water seep through. 3. NOTE ~ Do not stir. 4. Turn up the heat to medium-high and bring to a boil. Without stirring, boil for 8 minutes. 5. Remove caramel from heat and once cooled, beat in yoghurt and vanilla extract. ---------------------------------------------------------------------------
