Edamama Guacamole


1. Put edamame, avocado, chipotle, cilantro, onion and juice in a food processor and pulse until almost smooth. Add enough water or extra juice to make a creamy consistency and pulse again. Transfer to a bowl, season with salt and pepper. Serve with pita chips, tortilla chips, carrots, celery. This also makes a good sandwich spread.
