Ethiopian Yataklete Kilkil


1. Add potatoes in a large saucepan, add salt and just enough water to cover potatoes, Boil until tender about 10 minutes or more. Remove from heat and drain water.

2. In a large saucepan or Dutch oven, heat oil over medium heat. Add onions and cook for two minutes. Stir in all the spices; garlic, Jalapenos pepper, ginger, coriander, smoked paprika, curry, ground pepper, and chili pepper. Cook for another 5 minutes, stirring occasionally to prevent burning. Then add tomatoes and bring to a boil. Simmer for 5 minutes.

3. Add cooked potatoes, green beans and carrots. Season with salt to taste.

4. Continue to simmer for about 10 minutes; stirring frequently, to allow the flavors to blend. Add water, if necessary, if mixture becomes too dry.

5. Adjust for seasonings. When the carrots and beans are sufficiently cooked and tender, it's ready to serve.
