Etruscan Peasant Soup


1. Heat olive oil in heavy 4 quart sauce pan.

2. Cut sausage into 1/2 inch pieces.

3. Brown sausage in pan until no longer pink.

4. Add onion and garlic and stir until softened.

5. Add spinach, chicken broth, diced tomatoes, beans and red pepper.

6. Heat to a boil and simmer for 15-20 minutes.

7. Ladle into bowls and sprinkle with parmesan cheese.
