Fiesta Chicken Tortilla Salad


1. To prepare chicken: Cut chicken breast into 1/4 inch strips and toss with Tabasco.

2. Heat oil (1/4 inch deep) until hot in heavy skillet.

3. Fry tortilla strips quickly until golden.

4. Set on paper towel to drain.

5. Season with salt.

6. Pour off all but a little oil and saute chicken for 2- 3 minutes.

7. Set aside.

8. To prepare dressing: Combine ingredients in blender and blend until smooth.

9. To prepare salad: Place lettuce, peppers and chicken in a bowl and toss with dressing.

10. Serve on individual plates and arrange tortilla strips on top.
