1. Cook the rotini according to package directions. 2. Meanwhile, in a large skillet, heat oil over medium heat. 3. Saute the garlic and onions. 4. Add zucchini and peppers, cook 5 minutes or until vegetables are tender, stirring occasionally. 5. Add the chili powder, tomatoes with diced green chiles and olives, and bring to a boil. 6. Reduce heat to low. 7. Simmer uncovered 10 minutes, stirring frequently, until mixture thickens. 8. Add rotini to vegetables. 9. Mix well. Sprinkle with parmesan cheese, if desired. 10.
