1. Cream butter and 1/4 cups sugar. 2. Stir in almond extract. 3. Add 1 1/4 cups flour and mix well. 4. Knead in remaining 3/4 cups flour. 5. Cover and chill at least 2 hours. 6. Roll out onto a lightly floured surface to 1/4 inch thickness. 7. Cut with a 1 1/2-2 inch cookie cutter. 8. Place on ungreased baking sheets. 9. Beat egg white until foamy and brush over cookies. 10. Sprinkle with remaining 2 tablespoons sugar and almonds. 11. Bake at 350 F until lightly browned, about 7-8 minutes. ---------------------------------------------------------------------------
