1. soak rice in water 2 hours, umm binat said this could only be 1/2 hour. 2. sprinkle tuna with bezar and salt. 3. fry in oil. 4. brown on both sides. 5. remove. 6. add onions. 7. brown. 8. add garlic and spices. 9. brown. 10. add tomato paste you could add more tomato paste here if you would like a redder rice and tomatoes. 11. brown. 12. add 4 1/2 c water. 13. add loomi , or if adding lime juice do that when you take off heat. 14. add fish. 15. simmer covered 20 minutes. 16. drain rice. 17. add to pot. 18. dont stir. the rice 19. cover with damp cloth and put lid back on . 20. simmer 10 minutes shake. 21. simmer 10 more minutes. 22. let set covered. ---------------------------------------------------------------------------
