Flambeed Chicken Margarita


1. Brown chicken breasts 6 minutes per side in 1-2 tablespoons butter; remove and keep warm.

2. Wipe out pan.

3. Melt butter and whisk in flour until smooth.

4. Cook for one minute, then add chicken broth and pepper, stirring constantly.

5. Bring mixture to a boil and cook until thickened, about 2 minutes.

6. Add Grand marnier and lime juice and mix well.

7. Return chicken to pan.

8. Gently pour tequila on one side of skillet and ignite using a long fireplace match.

9. Allow the flames to subside naturally, then serve.
