Flat Rice (Poha) Veggie Pilaf


1. Wash and drain rice.

2. Combine rice in bowl with 1/4 c water and soak 15 minutes.

3. Heat oil in a wok.

4. Add mustard seeds.

5. When they crackle, add cashews, raisins, hing, curry leaves, and all dry spices.

6. Stir to combine.

7. Add all vegetables, ginger, jalapeno, and cumin seeds.

8. Add 1 c water and cover.

9. Cook over medium heat until potatoes are done.

10. Add flat rice, cilantro, salt, sugar, and lemon juice.

11. Stir and serve hot with any green chutney.
