1. In large bowl, combine 1 cup all-purpose flour, whole wheat flour, ground flaxseed, undissolved yeast, and salt. Heat water, milk, honey, and butter until very warm (120* to 130*F). Gradually add to the flour mixture. 2. Beat 2 minutes at medium speed of electric mixer, scraping bowl occasionally. 3. Add egg and 1 / 2 cup flour; beat 2 minutes at high speed. Stir in enough remaining flour to make a soft dough. Knead on lightly floured surface until smooth and elastic, about 8 to 10 minutes. 4. Cover; let rest 10 minutes. 5. Divide dough into 16 equal pieces. Divide each again into 3 equal pieces; roll into balls. Place 3 balls in each section of greased 2 1/2" muffin pan cups. Cover; let rise in warm, draft-free place until doubled in size, about 1 hour. 6. Bake at 350*F for 15 to 20 minutes or until done. Remove from pan; cool on wire rack. Brush with melted butter.
