1. Put pork in boiling water. 2. Boil 1 minute; Drain. Rinse in cold water. 3. Cut pork in 2-inch cubes. 4. Put pork and 1 cup water in an earthenware or any other heavy pot. 5. Bring water to boil. 6. Add sherry, soy sauce, ginger, and scallions. 7. Cover pot tightly; Simmer over very low heat 2 hours. 8. Add sugar. 9. Bring to high heat. 10. Baste until gravy coats the meat. 11. May be prepared in advance. May be frozen. 12. Reheat before serving. ---------------------------------------------------------------------------
