1. Spread a thin layer of Dijon mustard on 1 tortilla. 2. Spread some Brie on the 2nd tortilla and top with a single layer of fresh spinach leaves. 3. Put the 2 tortillas together like a sandwich. 4. Heat Olive Oil on medium low in a large frying pan and brown the tortillas on both sides. 5. Cut through the tortillas like you would a pizza with a pizza cutter. 6.
