1. Put the flour, eggs and vanilla essence into a mixing bowl. 2. Add a pinch of salt. 3. Add the milk a little at a time and whisk until smooth like double cream Be careful to add the milk slowly otherwise it will form lumps. 4. Melt the butter in the microwave and add to the mixture. 5. To cook, melt a knob of butter in a non stick pan. 6. Add ¾ ladle of mixture to the pan and swirl it round. 7. Cook until the pancake moves around by itself in the pan. 8.
