1. Melt the shortening in a large skillet. 2. Sprinkle the chicken with salt and pepper; brown on both sides in the hot shortening. 3. Remove chicken, and place it in a lightly greased shallow 2 quart casserole dish. 4. Drain the excess shortening from the skillet and add the carrots, garlic, parsley and thyme. 5. Cook over low heart till the carrot is tender. 6. Add the carrot mix and remaining ingredients. 7.
