1. Saute leek in olive oil in a large pot 2 minutes. 2. Add onion, garlic, celery, and potato, saute 3-5 minutes. 3. Add water, stock, and salt. Bring to a low boil. 4. Simmer, covered, until potatoes are tender. 5. Remove from heat, strain off half of liquid and reserve. 6. Process potato/leek mixture in small batches in a food processor. Return to pot with reserved liquid. 7. Season to taste. 8. Stir in milk and serve hot. ---------------------------------------------------------------------------
