Garden Marinara Sauce


1. Put enough fresh washed tomatoes in an instapot (or some other electric pressure cooker) to fill about 2/3 full. I use whatever I have, which currently is Roma (paste tomatoes) from my garden. I suspect Romas are the best since they are specifically for sauce, but I have added other types to the mix as well. No need to cut.

2. Add the onion cut into chunks (quarters or so).

3. Add garlic and all the other ingredients to the pot.

4. Put the lid on and close the vent. Push the 'manual' button and adjust to high pressure and adjust time anywhere from 20-30 minutes.

5. When the pot beeps, you can leave until the pressure reduces naturally or use the vent to let the pressure out if you need the sauce quicker.

6. Use an immersion blender to blend all the chunks together into a nice sauce.

7. Leave the lid off and hit the sauce button, adjust to medium. Saute for 10-15 minutes to thicken the sauce and serve as desired.
