Garlic And Cheese Mashed Potatoes


1. In a large pot of boiling salted water, boil potatoes until very tender, about 30 minutes.

2. Drain well and transfer to a large bowl.

3. Add garlic and, with an electric mixer, beat the potato mixture.

4. Add butter and bacon fat and beat until smooth.

5. Stir in the cream.

6. Add cheese and mix with a wooden spoon until cheese is completely melted.

7. Season.
