1. Heat the oil in a large roasting tin in an oven set to 350°F. 2. Boil the potatoes and bay leaves in a pan of lightly salted water then simmer for 10 mins until tender. 3. Drain the potatoes in a colander, shaking them around in order to fluff up the outsides. 4.
