1. In a large mixing bowl, beat the eggs, sugar, oil and vanilla. 2. Combine the flour, cinnamon, baking soda and salt; add to egg mixture and mix well. 3. Fold in apples and nuts. 4. Pour into a greased 13x9x2-inch baking dish. 5. Bake at 350 degrees for 55-60 minutes or until a toothpick inserted near the center comes out clean. 6. Cool on a wire rack. 7. In a small mixing bowl, beat cream cheese and butter. 8. Add confectioners' sugar, beating until smooth. 9. Spread over cake. 10.
