1. Combine the 1/3 cup sugar and the cinnamon; set aside. 2. Whisk together the flour, remaining 1 tsp sugar, salt and half and half until smooth; thoroughly whisk in eggs. 3. In a heavy, 10" oven-proof skillet cook the apples in the butter over moderate heat, stirring, for 2 minutes; sprinkle with the sugar mixture and stir, cooking, until sugar is melted. 4.
