1. Place oil in a large nonstick skillet over medium-high heat until hot. 2. Add chopped pepper and onion; cook 3 minutes, stirring often. Add cumin, and cook 1 minute, stirring often. 3. Add chicken and tomato; cook 3 minutes, stirring often. Stir in minced cilantro, salt, and ground pepper. 4. Place about 1/2 cup chicken mixture on half of each tortilla. Sprinkle cheese evenly over chicken mixture on tortillas; fold tortillas in half. 5. Grill folded tortillas until cheese is melted and outsides are lightly browned. Set aside, and keep warm. Repeat procedure with remaining tortillas. 6. Garnish with cilantro sprigs, if desired. Serve immediately. ---------------------------------------------------------------------------
