1. Preheat oven to 375 degrees F. 2. Arrange the bread slices on a large baking sheet. 3. Brush olive oil over the bread slices. 4. Bake until pale golden and crisp, about 15 minutes. 5. Blend goat cheese and cream cheese in a food processor until smooth and creamy. 6. Add parsley, thyme and lemon peel; pulsing to blend. 7. Season with salt and pepper to taste. 8. Place in a serving dish along side the toast and brushetta mix. 9. Have guests spread cheese mixture on the toast and top with brushetta. 10.
